OUR STORY
An Ancient City. A Taste of Home.
Before it was Xi’an, it was Chang’an—a city where travelers met, cultures mixed, and flavors found a new home along the Silk Road. Today, people visit Xi’an for the Terracotta Warriors and ancient city walls. But sometimes, what they miss most after leaving is a bowl of noodles from a neighborhood shop. That’s the Xi’an we want you to know.
In Shaanxi, where Xi’an is located, noodles are part of growing up. The sound of dough hitting the counter. The sizzle of hot oil over chili. A familiar meal waiting at home. These are the everyday traditions that connect one generation to the next—and the flavors you miss when home is far away. At Taste of Xi’an, we bring a little of that home to Seattle’s University District and Bellevue. Chewy biangbiang noodles, refreshing liangpi, and savory roujiamo are our way of sharing where these flavors come from.
You don’t need to know the history to pull up a chair. Start with a dish you love. The story follows. If these flavors feel like home, welcome back. If they’re new to you, welcome to the table.

TEAM
Rooted in Xi’an. Made with Care.
For Chef Ji, Xi’an cooking is personal. It’s the food of his hometown—and the craft he’s spent more than 20 years practicing. That experience comes down to the details: how the dough feels in your hands, the satisfying chew of a noodle, and the balance of chili, vinegar, and spice. From handmade noodles to hearty beef and lamb dishes, his cooking carries the flavors of Shaanxi into our kitchen.
Alongside our kitchen team, Chef Ji brings those traditions to every meal we serve. The goal is simple: give longtime fans a taste they recognize, and first-time guests a reason to come back. Pull up a chair. We’ll take care of the cooking.
